The Italian farinata is typical street food from Liguria. Is not a pancake cooked in a pan and is not a flatbread... is just a farinata, baked in the oven...
You can find it white, with rosemary, onion, sausage, etc.

The farinata is the perfect balance of chickpea flour and water, baked with extra viring olive oil. Is a great snack, and the bonus here is that is gluten-free and vegan!

Here is the video recipe for it:
Ingredients
500gr chickpea flour
1,5lt water
7gr salt
90gr extra viring olive oil per tray
500gr mix per tray
Rosemary, onion and sausage

Steps
1. Combine the flour with the salt and water. Leave it to foam for about 15 minutes.
2. After 15 minutes you can mix it and leave it to rest in the fridge for at least 3 hours (max. of 12).
3. Prepare your toppings.
4. Preheat your oven (static) at 250cº.
5. Pour the olive oil in the tray and your mix on top. Pour your 500ml of mix on top and mix with the fork. Watch out! Don't touch the base, just the surface!
6. Add your toppings and bake for 20-25minutes at 250ºC.
