Cantucci with almonds and Vin Santo

These "biscotti" called cantucci are typical from Tuscany. They are made with almonds, but you can try to do them with chocolate chips too.
They are baked and after that toasted, so they remain crunchy. They are perfect to dip in a glass of Vin Santo (or sweet wine) after dinner.
Now let's see how to bake them!

Ingredients:
500GR Flour
200GR Eggs (4)
350GR Caster sugar
80GR Butter
250GR Almond Skin on
1GR Salt
4GR Baking powder

Steps:
Beat the butter with the sugar. Mix until it gets foamy, but not overheat it or overmix it.
Once is ready add the eggs slowly. Mix no more than 2 minutes.
Mix all the "powders", flour, salt and baking and add to the dough.
Finally add all the almonds skin on.
Pipe on the dough in a long shape over the parchment papper and bake for 25-30 minutes at 170ºC ventilated oven.
Once they are ready cut it in small biscuits and bake them again at 100ºC for 5 minutes each side. And they will be ready to soak in your sweet wine! Enjoy.
