FOCACCIA DI RECCO WITH CHEESE | The THINNEST FOCACCIA in the WORLD

My Favourite focaccia, The Recco's Focaccia.The thinnest focaccia in the world, filled with soft cheese (stracchino or crescenza), The original focaccia bread Genovese. It looks difficult but is not, you need just the right recipe and a bit of practice. You will need just a few ingredients. Flour, water, salt, extra virgin olive oil and cheese.


The ingredients of this thinnest focaccia are:

800 gr Flour Manitoba

430 gr water

17 gr salt

40 gr Extra virgin olive oil.


Ingredients for Soft cheese filling with cream (1 tray):

400 gr Stracchino (soft cheese)

100 gr Single Cream.


Ingredients for the crescenza filling (1 tray) :

500 gr Prescinsoa Genovese Fresca (Italian crescenza)

The extra virgin olive oil for this recipe is from Azienda Agricola Frantoio Bronda Renzo.


Step By Step:

  1. Mix all your ingredients: flour, salt, water and olio EVO

  2. When the dough is done, leave it to rest for 30 minutes

  3. After it divides your dough, for 1 try (home's oven size) 400gr for the base and 200 gr for the top.

  4. Start to stretch your dough (base) with the rolling pin, leave it to rest another 20 minutes and stretch it very thin, use the board of your try as a frame (this is the most important step, watch the video)

  5. Prepare your filling mixing your soft cheese with a bit of cream to make it more creamy

  6. Cover your base with the filling

  7. Stretch the top as the base to cover it, and close the board of your focaccia using a rolling pin.

  8. Make some holes with scissors or knives, will prevent to swelling and break

  9. Olive oil, a pinch of salt on the top and let's bake, 220 cº for 15/20 min
