Homemade donuts

Today I want to show you how to make donuts at home, and not only.

Whit this dough you will be able to do as well the Italian bomboloni.


I show you as well how to bake them in case you prefer a different texture or want to try the donuts without frying.


I did fill my bomboloni with a pastry cream I made at home if you want to try, check out the recipe here.


Otherwise, you can use some Nutella, jam, etc.


Ok, let's get started then 👨🏻‍🍳






for Donuts & bomboloni:


300gr flour

4gr salt

60gr butter

24gr fresh yeast

24gr yolk (1 yolk)

90gr egg (2 eggs)

66gr water

45gr sugar







1. Mix the yeast with the water.

2. Mix all the ingredients except the butter (flour, salt, sugar, yolk, eggs, water and yeast.) Mix for at least 15 minutes.

3. After that add the cold butter.

4. Give a pair of turns and leave to rest in the freezer for 30 minutes covered with cling film.

5. After 30 minutes, line up your dough at not more than 2 cm and shape your donuts.

PERSONALIZE: You can shape like doughnuts or Italian bomboloni. Keep the center of the doughnuts for mini bomboloni.

TIP: Cut the parchment paper in squares and place your doughnuts on top, like this, when you will fry them, they will not get stuck to the tray and they will not lose the shape.

TIP: Don't bin the leftovers, but mix the dough and leave it to rest a bit in the freezer. Once it's cold again, you can shape it into more doughnuts.

6. Let them proof for 3hours at room temperature. (Can change depending on your room temperature)

In the mid while, you can prepare some filling. I did a very easy pastry cream or vanilla custard cream you can try following the recipe here.



7. Time to cook! If you want to bake them, preheat the oven at 180ºC and in more or less 15 minutes they should be ready.

If you want to fry them, use vegetable oil, but careful, don't use it very hot, if you have a thermometer, you can check, the right temperature should be 160ºC. Fry them for about 1 minute, or until they are golden.

8. You can use any glaze, on my video I'm using some caster sugar and cinnammon.


9. Once they are ready you can refill them with the cream, chocolate or whatever you like the most. TIP: For the baked ones, make a hole before filling them up.
