Italian Pizza slab (home-made)

Pizza slab it's a great way to make a quick and easy pizza in the oven tray.

It's a kind of pizza that stays soft and tasty even when cold, ideal for the beach or a picnic day.

Ingredients:


Dough

500 gr plain flour

320 gr water

50 gr extra virgin olive oil

10 gr fresh yeast ( if dry use 3 gr instead)

6 gr salt


Sause

700 GR Tomato Passata

1 tsp of salt

25 gr extra virgin olive oil


Step by step


  1. Create autolysis mixing the water with flour to create the gluten.

  2. Leave it to rest for 1h - 1h30 at room temperature.

  3. Meanwhile, prepare the tomato sauce mixing the tomato with the olive oil and the salt. Personalise: You can add some oregano to it.

  4. Cut the mozzarella and leave it to drain the water. TIP: In your supermarket, you can find a specific mozzarella for Pizza that contains less water. Personalise: Like more toppings? Add them!

  5. After 1h30 the dough should be more elastic. Add the olive oil and mix.

  6. Add the salt with the yeast and mix.

  7. Leave the dough to rest for 30 minutes.

  8. After 30 minutes give some turns to the dough to give more straight and structure.

  9. Expand the dough in your oven tray with some olive oil on it. Keep expanding every 10 minutes until it covers the whole tray.

  10. Add the tomato sauce and mozzarella.

  11. Preheat your oven and bake at 180ºC for 20 minutes.
