Today I will share with you the original baked cheesecake recipe.
A very tasty and creamy cake, as we use mainly cheese instead of gelatine, cream and sugar. And it's still easy to make, like the cold one, but I can assure you that you will notice the difference between both. ;)

Shopping list:
900gr Philadelphia
3 tbs flour
250gr caster sugar
1 & 1/2 lemon juice
150gr butter
300gr digestive biscuit
1 yolk
3 eggs
200ml cream

Step by step:
We start breaking the biscuits and put them in a cutter. We melt the butter and mixed it well with the biscuits. When the texture is like a paste we are ready to put it on a tray.
If you like your base thinner or thicker, you can adapt following the next rule: always use half of the weight of the biscuits on butter, if 300gr of biscuits then 150 gr of butter. ;)
After we bake the base in a preheated oven at 170ºC for 15 minutes.
Mildwhile we can start getting our mix ready.
The first step will be to mix the Philadelphia with the sugar. After a bit of mixing the sugar will make our cheese softer, so we will be ready to add our liquids, starting with the lemon juice. We mix and we add the cream. Then the eggs together with the yolk.
After our mix it's soft and smooth we can add the flour.
TIP: Use a manual whisk because our mix needs to be slightly whipped, like this our cake will be soft and smooth without bubbles.
Ready? Let's add our mix to the base, while we preheat our oven to 130ºC, and we leave it there for about 40 to 50 minutes, depending on the oven and how thick it's your mix.
PERSONALIZE: When it's ready you can add on the top some fresh fruits like strawberries or some jam. Try as well to add the jam between the biscuits and the mix.
